Chia (Salvia hispanica) originates from South and Central America, where it was first cultivated for human use over 4,000 years ago. Chia seeds can be eaten whole, ground into flour, or pressed to produce oil. Our chia flour is made from whole ground chia seeds grown in the highland of Mesoamerica (Mexico, Bolivia and Ecuador).

Chia seeds are reported to contain significant amounts of calcium, phosphorus, potassium, magnesium, niacin, vitamin A and vitamin C. The seeds are also known to contain a significant amount of the essential omega-3 fatty acids. The amino acid content is more complete than the protein from other grains. Chia seeds have been reported to contain phenolic acids such as chlorogenic and caffeic acids and the flavanols myricetin, quercetin and kaempferol. The insoluble dietary fibre is capable of retaining water several times its weight during hydration making it a good additive for bakery products and food emulsions.

Chia seeds have been shown to be effective thickening agents, gel forming agents, foam stabilisers, chelators and emulsifying agents. It’s binding properties means that it is often used as a vegan alternative to eggs in baking.
